I have already stated that I have a sweet tooth…. but I need to state it again! I have a sweet tooth!!! I have to say for the last few years I’ve really cut back on using refined overly processed sugars and switched most of our recipes for other more natural options like apple sauce, maple syrup, honey or dates! Now it has been a lot of trial and error, research but totally worth it.
This recipe was posted in a Facebook Group by another mom and I could tell right away by the ingredients that they would be delicious! And they were 🙂 I love finding recipes that are gut health friendly (main criteria is gluten free and refined sugar free!). The girls ate them up, they don’t know any different – and to be honest I don’t think most adults would find much difference between these and a regular white flour, white/brown sugar and butter recipe!
SOFT-BAKED ALMOND FLOUR CHOCOLATE CHIP COOKIES
These bendy melt-in-your-mouth gems are an incredible gluten-free, dairy-free, and low-carb alternative to traditional chocolate chip cookies.
Preheat oven to 375.
4 tbsp coconut oil
6 tbps maple syrup
2 tsp vanilla
4 cups almond flour
1 tsp baking soda
pinch of sea salt
1 cup chocolate chips (I used the semi-sweet I had on hand, but you can use a dairy free option!)
Combine the coconut oil and maple syrup. Add the rest of the wet ingredients followed by the dry.
Spoon onto parchment paper. Bake for 10-15 mins.
Makes 2 dozen cookies.

I don’t know about you but I sure do love knowing the yummy cookie I’m eating has actual nutritional value – and isn’t just a blob of empty calories. Since eating more and more sweet treats like these ones I actually find ‘regular’ sugar desserts way too sugary… my taste buds have adapted to what my body is craving — win/win 🙂
